Kale Salad With Spring Herbs

Spring herbs are in abundance. What a great way to freshen up your salad by incorporating seasonal herbs (Parsley and Mint) for an added burst of deliciousness.

Ingredients:

  • Kale (massaged in warm water and patted dry)
  • Parsley
  • Mint
  • Nori (optional)
  • Avocado (mashed)
  • Lemon
  • Extra Virgin Olive Oil
  • Nutritional Yeast
  • Pepitas (pumkin seeds- optional)
  • Salt (to taste)
