Don’t you dread it when you get invited to a Holiday Party and you read on the invitation “bring snacks to share”? As a Health Coach, I am always torn… what do I bring? If I take my healthy treats, no one will touch them… if I take something more “mainstream”, I won’t touch them… 

 Finding an easy to make, healthy, yet tasty snack that’s transportable in the car… quite a challenge! Well, I have found the perfect solution! 

 Who doesn’t love chocolate with peanut butter? How about we take the best from that combination and upgrade it with healthy protein, healthy fats and Superfoods? 

 Let me introduce you to my “Superfood Choco-PB bars”: delicious, satiating, festive, indulgent, nutritious and guilt-free. 

 Bottom layer: 

Ingredients 

  • 1 and ½ cups organic, pure peanut butter. 
  • ½ cup raw honey 
  • 2 cups hemp seeds 
  • 2 cups chopped brown rice cakes 
  • 1 tbsp. vanilla extract 

Directions 

Mix and pat into a greased or lined pan 

Top layer: 

Ingredients 

  • 1 cup of coconut oil in liquid form (heat up to liquefy from a solid form) 
  • ¾ cups of raw cacao powder 
  • 2 tbsp. raw honey 
  • 1 tbsp. peanut butter 

Directions 

Mix and pour on top 

Place it in the freezer for 30 minutes, then remove, cut and devour! 

Store in the freezer for as long as it lasts… in my family, all gone within an hour!
